This is something so simple I hesitate to even call it a recipe. And yet, I feel I should share because it is one of our go-to favorites. It changes every time depending on what we have but the basic idea is a take on Chipotle's burrito bowl. And the key is the cilantro-lime rice. I love that rice so much I could it eat by itself. Oh wait. I do.
So here's the recipe for fake-out Chipotle burrito bowls - this is something that we have refined and perfected over time but always changes just a bit.
You'll need:
White rice
Chicken
1 can Rotel tomatoes (I use the cilantro-lime kind for this)
1 can black beans
1 can corn
sour cream
guacamole (optional, we just happened to have some)
fresh cilantro, chopped
limes (2)
tajin seasoning (a mexican seasoning, optional but nice)
You'll do:
1) cook your white rice, stir in the lime juice and fold in the chopped cilantro
2) cook your chicken - we dice up boneless skinless chicken breast and toss it in the tajin seasoning and cook in olive oil on the stove in a skillet
3) warm the rotel, black beans, and corn in a small sauce pan
4) create your bowl by putting the cilantro lime rice on the bottom, then put in the chicken, then the black bean/corn/tomato mixture, and top with your choice of sour cream and guacamole
Sometimes we top with a sourcream/salsa mixture instead, which is also delicious.
So there you have it - one of my go to, easy "recipes".
