Make this: Fake-out Flying Saucer Chicken Nachos

We love the Flying Saucer. My favorite thing to get is the Chicken Nachos... so I decided to make knock-offs for dinner this week. 


What makes these nachos different is that they are big, individual tortillas with the nacho "stuff" on them. Much easier to eat in public. Plus they are delicious. 


I started gathering my ingredients:
- Taco shells
- Refried Beans
- Chicken (I used tenderloin cut up and cooked on the stove)
- Jalapenos (chopped)
- Tomato
- Onion
- Cheese (I used shredded and dip cheese)
- Cilantro
- Lime


I started with the taco shells - I broke them in half and they serve as the base of the nacho:


Then I added the refried beans:


Then the chicken:
Then the jalapenos:
Then the cheeses (shredded cheddar and Pancho's white cheese dip):

At this point, let's recognize the fact that this is all going on with dog underfoot:
And back on task...then the tomatoes and onions were next, along with a squirt of lime on each and some salt and pepper:


Then I popped it in the oven to melt the cheese and warm everything up - 350 for about 5 minutes or until melted. 


Here they are out of the oven - I added cilantro (which FS doesn't but I love cilantro):
 And here they are, ready to eat!
