In our church, it is encouraged not to give up something for Lent, but to take something up or to become more disciplined. For Lent this year, I decided to try to be more disciplined and diligent in our eating out habits. It is so easy for us to get home from school and just run out to get food. We decided to be better about planning, cooking together, and enjoying each other's company while eating meals. When we were in the thick of getting the kitchen done, we got reliant on eating out and now its time to break the habit.
In the spirit of Fat Tuesday and the Shrove Tuesday Pancake Supper tradition, we made breakfast for dinner as our dinner on Tuesday night. We went to the grocery on Monday and bought 12 ingredients to use for 3 meals this week. I was pretty proud of myself for that.
Our "Breakfast for Dinner" meal was an original idea based on the ever-popular "scrambler" style breakfasts you see around. We took:
- spicy sausage meat
- 6 eggs
- rotel tomatoes
- spinach
- feta
- salt/pepper
1) browned the sausage
2) broke/beat the eggs together
3) put the sausage, tomatoes, spinach, and feta in an omelet pan
4) over medium heat, poured the egg mixture into the omelet pan, over the other ingredients
5) let the egg cook, then scramble it up
We served in a bowl with a biscuit. This is one of those meals that looks disgusting but was just ridiculously good. I'm thinking next time we might have to serve as breakfast burritos with salsa on top.
